Schezwan Fried Rice: Beginner Level
Your favorite Indo-Chinese(?) isn't as difficult to cook as you think!
Schezwan Fried Rice is probably the easiest food to cook if you're craving restaurant-style comfort food on a cold winter night. Don't shell out hundreds of rupees on takeaway, make your own batch today!
Ingredients for one bowl:
- Oil
- Ginger Garlic Paste
- Capsicum
- Spring Onions
- Bell Peppers
- Chillies
- Onions
- Tomato
- Coriander Leaves
- Schezwan Sauce/Chutney
- Soy Sauce
- Salt
- Rice
Steps:
- Cook your rice and set aside.
- Chop your vegetables (1 small onion, 1 small tomato, 1 bell pepper, 1 capsicum, spring onions, 2 chillies, french beans, coriander leaves). All vegetables subject to availability. For all I care, you could make this dish without veggies too.
- Heat 4-5 tablespoons of oil in a non-stick pan.
- Add 1-2 chillies and one teaspoon of ginger garlic paste. Careful, for it might splatter.
- Cook this for 30 seconds to 1 minute on high flame, until the raw smell of the paste is gone.
- Add the chopped vegetables and saute until cooked on a medium-high or a high flame. This might take a while.
- Turn down the flame to the sim/low setting. Add one tablespoon of schezwan sauce and one tablespoon of soya sauce.
- Add salt to taste.
- Add the rice to this sauce/vegetable mix. Mix well for a minute or two.
- Turn the heat off. Add a couple chopped coriander leaves.
- Plate and serve.
Voila! Super-easy yet very flavorful schezwan fried rice to die for!
